Ingredients:
2 medium sized Brinjals
1 tbsp RM Spices Onion powder
½ tsp RM Spices Garlic powder
½ tsp RM Spices Ginger powder
1 tsp RM Spices Turmeric powder
½ tsp RM Spices Jeera Powder
½ tsp RM Spices Dhania powder
1tbsp Tamarind paste
1 tbsp Brown sugar
1 tbsp Toasted Sesame seeds
3 tbsp Cooking Oil
1tsp RM Spices Kashmiri Mirch powder
1 tsp salt

Method:
- Wash and pat dry the brinjal. Cut them length wise and keep the stem on.
- Score the inside of the brinjal and make a diamond pattern. Keep them aside.
- Take a mixing bowl and add all the spices and mix well along with 2 tbsp of cooking oil. Reserve the rest to drizzle on top latter. Mix well to form a paste.
- Take the brinjal and smear this spice mixture well on top and also into the cavities of the flesh.
- Place the spiced brinjal on a baking tray and drizzle with the reserved cooking oil, cover with foil and cook in an oven for 15 mins at 200 degree.
- Take off the foil and bake again for another 5 mins or until the top is nice and golden and the brinjal is cooked through.
- Serve hot with rice or roti.
